A Tasty BBQ-Themed Recipe for Spring

This BBQ pasta salad is a great food choice for the warmer weather in Potomac.

As spring approaches, many Potomac residents may be ready to bypass the warm soups and grab a lighter recipe to bring on the heat. When the sun's out, barbecue is a popular choice and this recipe for BBQ pasta salad from the Food Network's website is a must-try for this week's warmer weather. This tasty meal only takes about 10 minutes to make.

Ingredients:

  • 1 pound fusilli pasta
  • 2 tablespoons apple cider vinegar
  • 1 teaspoon hot sauce
  • 1/2 teaspoon chili powder
  • 1/8 teaspoon garlic powder
  • Pinch cayenne pepper
  • 1 cup mayonnaise
  • 1/2 cup barbecue sauce
  • 1 red bell pepper, seeded and chopped fine
  • 2 ribs celery, chopped fine
  • 2 whole scallions, sliced thin
  • 8 ounces pulled pork
  • Kosher salt and freshly ground black pepper
  • chopped parsley leaves, for garnish

Boil 4 quarts of water in a large pot over high heat. Salt the water and then add the pasta and cook it until it is tender — this should take about 10 minutes. Drain pasta in a colander and then transfer to a large bowl.

In another large bowl, mix vinegar, hot sauce, chili powder, garlic powder, cayenne pepper, mayonnaise and barbecue sauce. Add the chopped vegetables and toss them to coat them in the mixture. Pour barbecue dressing over the pasta and mix it well. Place the pork on the top of the mixture and season it with salt and pepper.

Cover and refrigerate until ready to serve, garnish with parsley and enjoy!
